I have seen instruments on board but I dont think you can just “take a whole overhead bin” without having permission to take something larger then a normal carry-on with you. I bet they charge you more than double what a normal carry-on would set you back.
My country is too small for domestic flights, might explain the difference in our experience. Here your carry-ons are paying a serious part of their costs, no way they’d let someone take up double or triple the space without asking for money.

Instruments can be carried-on. I don’t think there’s an up-charge.
